Super Easy Way to Cook Pumpkin!

Make fresh pumpkin puree in the Instant Pot! So quick and easy! 

Canned pumpkin is great to fall back on. But if you have time, making fresh pumpkin puree is the way to go! The taste is sweeter, more flavorful and just fresher.

Cooking up fresh pumpkin in the Instant Pot is so easy and fool-proof! Begin by cutting the top off the pumpkin and scooping out the seeds and string.

It is recommended to use a sweet/pie pumpkin for making puree, as it will come out sweeter. It also fits perfectly in the Instant Pot.

Add a cup of water to the bottom of the inner pot and place pumpkin on the trivet. Cover and seal and cook on high pressure. 

Allow to cool, then scoop out flesh. Optional step - strain excess water to make for a richer. ore flavorful puree.

Add pumpkin to a high speed blender or food processor, along with a bit of water, and blend till creamy.

Store fresh pumpkin puree in the fridge for up to a week, or in the freezer for up to 6 months. Portion in freezer bags or ice cube trays.

It is not recommended to use carving pumpkins, as the flesh tends to be more bitter. But they can be cooked up the same way if that is all you have on hand.

If you do not have an Instant Pot, steam on the stove top. Take a large stock pot and add a steamer basket and 2 cups of water. Place pumpkin in the pot, cover, and steam on medium-low.
