Make this easy 4 ingredient winter spritz cocktail for your next cozy night at home or festive gathering. Chocolate bitters complement St-Germain liqueur perfectly, for a rich yet refreshing winter cocktail.
When searching for light cocktail spritzes for the holidays, the most common recipes I found were for twists on an Aperol Spritz. Between you and me though, I much prefer the warm and botanical flavors of St-Germain.
It’s why I chose to give it a twist with my cranberry St-Germain spritz. It then launched a cranberry gin spritz, and a ginger cranberry gin cocktail. I switched this cocktail up with some chocolate bitters and fresh rosemary sprig. Let me show you how easy it is!

Winter Spritz Ingredients
- Prosecco – a sparkling wine produced in the Prosecco region of Italy. Prosecco is crisp and refreshing, and a bit more fruity than champagne, and pairs nicely with the St Germain.
- St Germain – A French liqueur made using elderflowers handpicked when in full bloom in early-late spring.
- Sparkling water – I love using Perrier or Pellegrino. Do not use tonic water.
- Chocolate Bitters – Bitters are neutral alcohol infused with herbs, spices, fruits, roots, tree bark, and other botanicals. In the case of chocolate bitters, they are infused with cacao.
- Seasonal garnishes – fresh rosemary sprigs, sugared cranberries or dehydrated orange slices
Mixing your cocktail
Classic spritz prosecco cocktails ratio is 3-2-1. Three parts prosecco, 2 parts liqueur (Aperol, St-Germain, Lillet Blanc or Campari), and 1 part club soda.
I personally think the 3-2-1 ratio makes the cocktail a little too strong and even a bit overpowering though, so I adjust the ratios to 3 parts prosecco, 1 part St. Germain and 1 part soda water. Then finish off with a few good drops of the chocolate bitters.
Add the Prosecco, St-Germain and soda water to a cocktail glass filled with ice. Stir with a cocktail spoon and finish off with bitters and garnish. Or you can make in a cocktail mixing glass. But I do not recommend mixing in a cocktail shaker, as the fizziness of the Prosecco may cause a problem.
For a tall 10 ounce Collins glass, mix 3 ounces of prosecco, 1 ounce each of St. Germain and sparkling water. For a bigger glass as pictured here, double the amount. 6 ounces prosecco, and 2 ounces each of St. Germain and water. Finish off with chocolate bitters.
To make a large batch for a party
To make a batch for a standard size 80 ounce pitcher for a party, add 1 750 ml bottle of prosecco, ½ 375 ml bottle of St. Germain, and ½ bottle of a 750 ml bottle of Pellegrino. Finish it off with several doses of chocolate bitters.
This works out to roughly 26 ounces of Prosecco, 13 ounces of sparkling water, about 7 ounces of St Germain.

Cozy Winter Spritz with Chocolate Bitters
Ingredients
- 6 ounces prosecco
- 1 ounce St-Germain
- 1 ounce soda water
- chocolate cocktail bitters
Instructions
- Add prosecco, St-Germain and soda water to a wine glass and stir. Pour in ice and finish with desired amount of chocolate bitters.
