- Fresh cheese tortellini found in the refrigerated section at the grocery store

Step-by-step directions
Making this flavorful soup couldn’t be easier! You will love how quickly you get dinner on the table.
In a large pot or dutch oven, heat 2 tablespoons of olive oil on medium heat. Sauté diced onions for 2-3 minutes till translucent, then add carrots or other fresh veggie, and sauté for another 5 minutes, stirring frequently.
Raise stove to medium-high heat, stir in chicken stock and bring to a gentle boil. Then add in the cheese tortellini and cook according to package directions, just till al dente.
Lower heat to medium low, and stir in chicken, pesto and season with salt and black pepper. Cook till chicken is just heated through.
Top your chicken tortellini soup with parmesan cheese sprinkles, red pepper flakes and serve with crusty bread.
Store leftover soup in an airtight container for 3-4 days, but don’t worry, I doubt there will be any leftovers! This is a perfect meal for soup season, as it’s warm and filling, but not overly heavy. I promise you this will secure a permanent spot on your list of easy meals.
Recipe FAQ’s
Absolutely! Raviolis would be excellent as well, I just like how cute and bite size the tortellini is.
You can certainly add two chicken breasts or thighs to the boiling broth and cook through, then shred and set aside. Cook the tortellini as directed, then add the shredded chicken back in.
