- ½ dozen mini sweet bell peppers – the mini peppers usually come in a 1 lb bag, but for a 4 ounce goat cheese log, you’ll need only 6 cut in half and de-seeded.
- 4 ounces plain goat cheese – preferably closer to room temperature so it mixes easily.
- 1 garlic clove, minced, or 1 teaspoon garlic powder.
- 1 tablespoon fresh herbs such as parsley, basil or dill, finely chopped.
- Dried herbs including paprika, red chili flakes, black pepper and sea salt or kosher salt.
- 2-3 slices of prosciutto, finely chopped and cooked till crispy.

Making this quick appetizer couldn’t be easier. Simply add the goat cheese, minced garlic, fresh and dried herbs to a small mixing bowl. With a spatula or spoon, stir the cheese mixture till all ingredients are well incorporated.
Alternatively, if you wish for the cheese mixture to be even creamier, you can add all those ingredients to a food processor and pulse till smooth and creamy.
Now, you just chop up the prosciutto and cook in small skillet till nice and crispy.

- 6 Mini bell peppers cut in half & de-seeded
- 4 ounces Goat cheese softened, at room temperature
- 1 Garlic clove minced (or 1 teaspoon garlic powder)
- ¼ teaspoon Paprika
- ⅛ tsp Red chili flakes
- ⅛ teaspoon Black pepper
- ⅛ teaspoon Sea salt
- 1 tablespoon Fresh herbs very finely chopped
- 2 slices Prosciutto finely chopped and cooked till crispy
Instructions
- Cook prosciutto in a saute pan over medium heat until crispy, and slice bell peppers in half and de-seed them. Set both aside2 slices Prosciutto, 6 Mini bell peppers
