Nutty Baked Granola
A versatile recipe that can be made using a variety of add-ins, is vegan friendly, and can be gluten-free. Recipe adapted from 100 Days Of Real Food.

Ingredients
- 3 cups rolled oats or quinoa flakes if sensitive to oats
- 1 cup raw cashews
- ½ cup raw pepitas
- 1 cup unsweetened shredded coconut
- 2 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cloves
- ½ cup maple syrup
- ⅓ cup olive oil
- 2 teaspoon vanilla extract
- sea salt
Instructions
- Preheat oven to 250 degrees and line a baking sheet with parchment paper
- Mix all dry ingredients in a large mixing bowl
- Whisk olive oil, maple syrup and vanilla in a separate bowl
- Combine the olive oil mixture with the dry ingredients and stir to combine
- Spread onto the baking sheet, pressing down so that the granola sticks together
- Bake for 60 to 75 minutes
- Allow to cool, and break granola into small and large chunks.
