What Is Andouille Sausage?
Andouille sausage is a spicy smoked meat. It’s made from pork, and it’s already cooked. If you aren’t into spicy, then you can swap it out and use another smoked sausage, such as kielbasa.What Is Old Bay Seasoning?
Old Bay seasoning is a wonderful spice mixture usually paired with seafood. But honestly it goes great on a lot of things! - Oil – You are going to use 3 Tbsp. oil total – but divide it up. The first 2 Tbsp. will be used on the corn and potatoes. I brush the oil on the veggies with some salt and pepper and let those cook first. The remaining tablespoon will be brushed on the fish.
- Salt and pepper – You can season to taste – but make sure to sprinkle some salt and pepper on the veggies and fish before baking. You can always adjust to your own taste once everything has been baked.
- White Fish – I recommend a cod or halibut. They are both flaky white fish, that cook up quickly and are often found fresh and frozen.
- Sausage – I used andouille sausage, which can have some heat to it, but you can use another smoked sausage if you like. I just simply slice the sausage into thick chunks.
- Potatoes – We used small red potatoes, but you could swap out and use small white potatoes instead. If you use a large potato, be sure to dice them up small so they cook quickly.
- Corn – Fresh corn on the cob cut in half, making them perfect to share.
- Butter – Melted butter will be combined with the Old Bay seasoning and brushed on the veggies and fish in the end.
How To Make

Bake The Corn And Potatoes First. These take the longest to bake, so we want to get these on the sheet pan first. Start by preheating the oven to 500 degrees and place the corn and potatoes on the baking sheet.Toss the potatoes and corn with 2 tablespoon of olive oil, salt and pepper, and bake for 20 minutes. Remove the corn from the tray and set aside in a bowl. Lower oven to 400 degrees. The potatoes will continue to bake longer.

Bake the fish and sausage. Add the fish and sausage to the tray, alongside the potatoes, and brush the remaining 1 Tbsp. oil on the sausage. Sprinkle with salt and pepper. Bake for another 10 minutes, until fish easily flakes with a fork and is 130 degrees internal temperature. Andouille sausage is already cooked, so it just needs to heat threw.

Make Your Butter Mixture. While baking, melt the butter and stir in the Old Bay seasoning. Remove the sheet pan from the oven, and add potatoes to the bowl with the corn. Pour half of the butter mixture over the potatoes and corn, and toss to coat thoroughly. Brush the remaining butter mixture over the fish filets.

Garnish and Serve! Place all ingredients on a serving tray and sprinkle with fresh chopped parsley. Serve immediately.
Tips For Making This Sheet Pan Dinner
- Don’t Overcrowd The Sheet Pan. Make sure everything you are baking has enough room so everything can bake evenly and get crispy.
- Make It Your Own. If you have small white potatoes then use those. If you have smoked sausage, and not andouille then use that. Want to add a little red pepper for kick? Then do so! By all means adjust where needed!
- Coat In Oil. You want to make sure to brush the veggies with oil so they don’t stick.
What Fish Is Best To Use For This Sheet Pan Dinner?
