Edamame Hummus with Avocado

Enjoy this delicious high protein and high fiber edamame hummus made with avocado and fresh soy beans. Perfect for a dip or a sandwich and wrap spread!

Equipment

  • 1 Food Processor

Ingredients

  • 1.5 cups Edamame shelled, thawed if frozen
  • 45 grams Avocado ½ medium avocado
  • ¼ cup Italian parsley loosely packed
  • 2 medium Garlic cloves
  • 3 tablespoon Lemon juice adjust to taste, may add up to 3 tbsp
  • 2 tablespoon Olive oil
  • ½ teaspoon Kosher salt
  • teaspoon Black pepper
  • ¼ teaspoon Coriander ground
  • ¼ teaspoon Red pepper flakes small pinch
  • 2 tablespoon Water adjust as needed to get desired consistency

Instructions

  • Add all ingredients, including 2 tablespoon of water, to a food processor and process till ingredients are combined.
    1.5 cups Edamame, 45 grams Avocado, ¼ cup Italian parsley, 2 medium Garlic cloves, 3 tablespoon Lemon juice, 2 tablespoon Olive oil, ½ teaspoon Kosher salt, ⅛ teaspoon Black pepper, ¼ teaspoon Coriander, ¼ teaspoon Red pepper flakes, 2 tablespoon Water
  • Open food processor, scrape down the sides of the processor bowl and check the consistency. Replace lid and process till smooth, adding more water, 1 tablespoon at a time, if desired to achieve a looser dip.
  • When dip consistency is creamy, remove lid of the food processor and taste. Adjust taste with more salt and or lemon juice and process one final time to blend additional ingredients.
  • Serve with additional edamame and red pepper flakes as a garnish, and veggie and pita chips on the side.

Notes

The amount of water you use will vary between 2-4 tbsp.
Note that edamame hummus will not achieve a very creamy and smooth consistency like traditional chickpea hummus. It is normal for this hummus to have more of a texture to it but ingredients should still be processed till smooth and no longer chunky.
