Ricotta Dessert Parfait with Fresh Fruit and Preserves
A perfectly sweet and savory ricotta dessert parfait that's layered with fresh figs and preserves. So easy to make and can be customized to suit your preferences for any fruit you would like! Bonus is that it's also incredibly nutritious and low in sugar!
8ouncesLow-fat cottage cheesedrain excess liquid so it's as 'dry' as possible
2tablespoonMaple syrupadjust sweetness level as needed; can go up to 3-4 tbsp
½teaspoonVanilla extract
½teaspoonLemon zest
Fresh cracked pepper and sea saltjust a pinch of each

Instructions
Add all ingredients except the fruit preserves and fresh fruit to a food processor and blend till smooth.
15 ounces Part skim ricotta cheese, 8 ounces Low-fat cottage cheese, 2 tablespoon Maple syrup, ½ teaspoon Vanilla extract, ½ teaspoon Lemon zest, Fresh cracked pepper and sea salt
Transfer ricotta cheese mix to a bowl and cover tightly. Refrigerate for at least 1-2 hours and up to overnight to allow the mixture to firm up and thicken a bit.
When the ricotta dessert is ready, spoon out the mix into small serving size dishes, layering the ricotta mixture then a bit of fresh fruit. Top with a bit more ricotta cheese mixture, a teaspoon of the fruit preserves and additional fresh fruit.

Garnish with mint and/or crushed nuts of choice.
